1 cup self-raising flour
½ cup olive oil
½ cup milk
1 ½ cups Dairyworks Tasty, grated
2 Tbsp pumpkin seeds + extra to top
8 sundried tomatoes, patted dry and chopped
1 small red onion, finely diced
3 Tbsp basil pesto
½ cup Dairyworks Mozzarella, grated
Grease and line a loaf pan with baking paper and preheat oven to 180 degrees Celsius.
Place flour, eggs, oil and milk in a large bowl and mix until well combined.
Add pumpkin seeds, sun-dried tomatoes, red onion and Dairyworks Tasty. Mix well.
Pour batter into prepared pan and spoon over basil pesto. Swirl through batter using a butter knife.
Sprinkle Dairyworks Mozzarella over loaf and top with a scattering of pumpkin seeds.
Place in oven and bake for 40-45 minutes or until cheese is golden and a skewer comes out clean.
Allow to cool in pan for 5 minutes before turning onto a wire cooling rack. Slice and enjoy warm or cool.
